Today we are chatting all about the perfect vegan cornbread recipe! This is a fantastic recipe to have at any dinner party, to pair with any holiday menu or even to have for a delicious snack/dessert. I highly recommend choosing the best cornmeal possible to get the best taste. I personally like to grind my own corn down into homemade cornmeal. If you have yet to try this, I highly recommend it!

The Perfect Vegan Cornbread

Drying your own corn to make homemade cornmeal is as easy at 1-2-3!

 

There are a few methods to drying your own corn before grinding down to a homemade cornmeal. My personal preference is to simply pull the husks back and hang the cobs in a breezy, sunny and dry area. My balcony is perfect for this and I have never had an issue. It’s important to know that drying corn on the cob does take longer because the entire cob has to dry out completely and mold can occur if not breezy/sunny/dry enough. Be sure to keep an eye on the ears and move if the moisture is too high.

Another option is to blanch the korn for 10 minutes in boiling water and then let dry completely. With washed hands, remove the kernels very carefully. I like to use a small spoon to pop out each kernal row by row. Place the kernals on a baking sheet lined with parchment paper and cover with a mesh cloth/cheese cloth to allow air to come in but to protect from any elements. Place in a breezy, sunny and dry area and allow to dry completely.

Either way you choose, once the corn has completely dry, just grind down to a cornmeal!

Ingredients

  • 1 cup cornmeal
  • 1 1/4 cup flour
  • 1 1/4 cup non-dairy milk unsweetened
  • 1/4 cup maple syrup
  • 1/3 cup aquafaba juice from a can of garbanzo beans
  • 1 tsp baking powder
  • 1 tbsp vegan butter heaping tbsp
  • 1 tbsp apple cider vinegar
  • 1/2 tsp sea salt

Instructions

  • Preheat oven to 400F/200C.
  • Add all of the dry ingredients to one bowl and mix well. In a seperate bowl, mix together the wet ingredients.
  • Mix together the wet and dry and pour into a greased, parchment paper lined or silicone square baking dish. Spread the mixture out evenly.
  • Bake for 25 minutes. Serve warm with some vegan butter on the side.
