Healthy Vegan Brownies in 30 Minutes!

Craving something as decadent and moist as brownies but don’t feel like dealing with the sugar/oil/processed crap high afterwards? Don’t worry, I got you covered! These healthy vegan brownies are a beautiful mixture of chickpeas (garbanzo beans) and almond butter that mesh together like you wouldn’t believe.

Bonus: These are 100% cruelty-free!

When I made them the first time I soon discovered that creating the perfect vegan brownies was not as easy as I thought. I tried different recipes and mixed up the ingredients several times, sometimes they came out too dry to be even called a brownie, or too similar to a weird cooked chocolate mousse.
But I was determined, and so were my kids, who really wanted me to succeed! This recipe I came out with it’s the most amazing fudgy, gooey brownie you could ever taste!
To make it even more perfect usually try and invest in good quality ingredients, especially for the chickpeas and the chocolate chips, who are quite difficult to find diary-free. 
Also, and I cannot stress this enough, let them cool down before eating them. I know, I know, it’s sooo temping when they come out of the oven to just take a bite, the whole house smells like chocolate, and you just want to check how they turned out, right?
But trust me on this, let them cool down as much as possible, sometimes I even let them sit in the fridge for a couple of hours. And by the way, this goes for almost everything sweet that comes out the oven. You gotta be patient.

Ingredients

  • 1 can chickpeas rinsed and drained
  • 1/2 cup almond butter any nut/seed butter can be substituted
  • 1/2 cup vegan chocolate chips 85 grams dark chocolate
  • 1/4 cup cocoa powder or cacao powder
  • 1/3 cup maple syrup can sub for packed medjool dates (pitted)
  • 1 1/2 tsp vanilla extract alcohol free options available
  • 1/2 tsp baking soda
  • Pinch Sea Salt

Instructions

  • Preheat oven to 350F/175C. Line a baking sheet or baking dish, as you wish, with parchment paper or a silicone mat.
  • Blend all ingredients together. Taste test and adjust. If adding nuts or sprinkles, add these after the blending has completed. Simply stir in.
  • Pour into the baking dish and spread out with a spatula until even.
  • Bake for 30 minutes. Allow to cool for 10 minutes before serving. Enjoy!
