We snagged a waffle maker from the second-hand store for next to nothing and have made waffles almost every single day for the past 2 weeks ??

Do you know why second-hand shopping rocks? Here are just a few reasons:

  • Saves Resources: The amount of resources that goes into simple appliances like toasters, microwaves, and even waffle makers is mind-blowing. There is absolutely no need to make new ones if we have perfectly fine second-hand appliances! Let’s save our much-needed resources and thrift.
  • Saves Money: Appliances are not cheap and many families are already dealing with debt from over-consumption as is. Let’s give our wallets a break while saving the Earth!
  • Reduces Waste/Pollution: The majority of folks who no longer use their appliances will toss them out without even thinking about recycling. The landfill crisis is extremely serious and we must be more conscious about our waste. Instead of throwing out, try repairing, selling, or recycling properly.
  • Fights against over-consumption: The more we demand better, the better it will be. It really is that simple.

Martin and I were walking through the second-hand store 3 weeks ago and spotted a beautiful little gem in a brand new box. We both looked at her, looked at each other and smiled so big. We ran for her and giggled all the way to the cash register with 5 euros in hand.

And that is how my obsession with waffles began… haha!

These waffles are delicious, sugar-free, oil-free, WFPB, and can even be made with gluten-free oats. They are perfection!

Equipment

  • waffle maker

Ingredients

  • 2 cups non-dairy milk
  • 1 ½ cups flour Whole Wheat or Gluten Free
  • ½ cup corn starch
  • 2 tbsp almond butter any nut/seed butter
  • 1/8 tsp sea salt
  • ½ tsp cinnamon
  • Fruit to Top
  • Maple/Date Syrup to Serve

Instructions

  • Whisk together the flour, starch and cinnamon.
  • Add in non-dairy milk and whisk again. Lastly, whisk in almond butter until smooth.
  • Pre-heat waffle maker **The nut/seed butter will work as your non-stick so no need to spray or grease* and add 1/3 cup batter once heated.
  • Cook until go light comes on and repeat!
  • Slice fruit on top and drizzle with maple/date butter.

Notes

**Baking powder can be added to this recipe if you wish. I would add in 1 tsp. I found that it is not quite needed in this recipe and that the waffles came out crispier without it!
